Processing: Traditional wheat was freshly milled; today’s flour undergoes storage, refining, and additives. 5. Farming Methods: Earlier used natural fertilizers; now chemical fertilizers and pesticides are common. 6. Health Effects: Issues like bloating, insulin resistance, weight gain, fatigue, and allergies have increased. 7. Gluten Sensitivity: Some people experience acidity, joint pain, and skin problems. 8. Reduced Variety: Local wheat varieties are disappearing, replaced by uniform hybrids. 9. Dietary Habits: Wheat is consumed daily in every meal, giving the body no rest. 10. Solutions: Use old wheat varieties, multigrain mixes, and have wheat-free days 1-2 times a week.

You can find old wheat types like “Khapli / Emmer” or “Bansi” at local farmer markets, organic stores, rural farmers, or some online platforms.

It is not necessary for everyone to completely avoid wheat. The key is how much, which type, and how it is consumed. Using the right amount, variety, and old strains can keep most people safe.
